Cranberry and Orange Scones

June 11, 2013

Last weekend I tried to make scones for my family and it came out really good. I’m going to make some more this weekend! Here is the recipe.

Cranberry and Orange Scones

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 ½ tablespoons granulated sugar
  • Pinch of salt
  • ½ cup (solid) unsalted butter (cut into cubes)
  • 1 cup cranberry
  • 1 teaspoon orange extract
  • 2 eggs
  • 1 cup milk

  1. Preheat oven to 450 degrees. Spray a large baking sheet with vegetable-oil cooking spray.
  2. Combine flour, baking powder, sugar and salt in a large bowl. Add the butter (cut in cubes) and mix the butter into the dry ingredients. Add the cranberries and mix again.
  3. In a separate bowl, beat the eggs and add milk. Now add the flour mixture and stir well.
  4. Knead dough gently on a lightly floured surface. Roll out the dough into a circle about ½ inch thick. Using a biscuit cutter (about 3-inch), cut into rounds. Lightly grease the biscuit cutter and dip into flour to keep dough from sticking.
  5. Once you are done cutting, placing each piece about an inch apart onto the baking sheet.
  6. You can serve the scones with butter and jelly – kids will love it!

This recipe makes about 14 scones. Depending on what you like, you can add raisins with almond extract. I think I’m going to try that. All the best!
